The most amazing Chicken Salad!

This chicken salad is not only ridiculously delicious, it's also low-carb! Our chicken salad is easy to make as it uses a pre-cooked rotisserie chicken. The rotisserie chicken also gives it a unique enhanced flavor.  Recipe from

  • 1 whole rotisserie chicken
  • 1 cup seedless grapes sliced in half
  • 1 cup sliced almonds
  • 2 stalks celery chopped
  • 4 green onions thinly sliced


  • 1 cup mayonnaise
  • 2 tbsp olive oil
  • 1 tbsp spicy brown mustard
  • 1 tbsp lemon juice (or juice from 1/2 lemon)
  • 1 tbsp dill
  • 1/2 tbsp parsley
  • 1 tsp kosher salt
  • fresh ground pepper to taste


  1. Combine Sauce in a bowl. Set aside and refrigerate.

    While sauce is cooling, remove all chicken meat from the rotisserie chicken.  Chop meat and place in a large mixing bowl. Add remainder of Base ingredients and combine well. Once combined, gently mix sauce into base until well mixed. Refrigerate for at least 30 minutes before serving. 

    Serve on a bed of leafy greens with sliced tomatoes and avocado. Can also be served as a sandwich on bread with green leaf lettuce.
